Filling, warm and simple, this vegan shepherd’s Filling, warm and simple, this vegan shepherd’s pie comes together pretty quickly. The plus side is that you can get all the dishes done while it bakes, so that all that’s left to do is to eat it. I made it this week with @gardein beefless grounds and it was 💯

... May I introduce... (!!) The adventure of three ... May I introduce... (!!) The adventure of three tomato plants that almost didn’t make the cut. *Annnd that’ll go down as the most dramatic gardening sentence I’ll write this year* 

But it’s true. I started an entire tray of tomato seeds inside back in March. I tended to them and was excited to watch them grow under my newly purchased grow lights. Throughout April and May, I added more and more trays to tend to. As other seedlings emerged, I began to store them in our small greenhouse but these guys remained inside. Under the grow lights, becoming tall and leggy. I thought since they became leggy, that they hadn’t had enough light and I blew it. But when the time came to clean up or throw away, I couldn’t not give them a shot. I tucked them into the corners of garden, situated in the extra space around the corn. May and June came and went, and July welcomed a big surprise. They were suddenly the biggest plants in our garden (that’s a story for another post). 

Fast forward to this week, they’re exploding with beautiful stems of tomatoes. Requiring multiple tomato cages to support their weight. 

And that’s the story of these three plants who just needed a little more room to grow.
